Ingredients
3 cups cooked chicken, shredded
1 cup cooked rice
1/2 cup buffalo sauce
1/2 cup ranch dressing
1 cup shredded cheddar cheese
1/2 cup blue cheese crumbles (optional)
2 green onions, sliced
Instructions
Preheat oven to 375°F (190°C).
Mix chicken, rice, buffalo sauce, ranch dressing, and half the cheddar cheese.
Pour into casserole dish, top with remaining cheese and blue cheese crumbles.
Bake for 20-25 minutes until heated through and cheese is melted.
Garnish with green onions.
7. Chicken and Spinach Alfredo Casserole
Ingredients
3 cups cooked chicken, cubed
3 cups cooked pasta (rotini or penne)
2 cups Alfredo sauce
2 cups fresh spinach
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Instructions
Preheat oven to 350°F (175°C).
Mix chicken, pasta, Alfredo sauce, spinach, mozzarella, and half Parmesan.
Pour into casserole dish and sprinkle remaining Parmesan on top.
Bake uncovered for 25-30 minutes until bubbly and golden.
