Ingredients
3 cups cooked chicken, diced
3 cups cooked pasta (penne or rigatoni)
2 cups marinara sauce
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 tsp Italian seasoning
Instructions
Preheat oven to 375°F (190°C).
Mix chicken, pasta, marinara sauce, ricotta, Italian seasoning, and half the mozzarella.
Pour into casserole dish and top with remaining mozzarella and Parmesan.
Bake uncovered for 25-30 minutes until bubbly and golden.
5. Chicken and Sweet Potato Casserole
Ingredients
3 cups cooked chicken, shredded
2 large sweet potatoes, peeled and cubed
1 cup cream cheese
1/2 cup sour cream
1 cup shredded cheddar cheese
1 tsp smoked paprika
Salt and pepper to taste
Instructions
Preheat oven to 350°F (175°C).
Boil sweet potatoes until tender, mash with cream cheese and sour cream.
In a casserole dish, layer chicken and mashed sweet potatoes.
Sprinkle cheddar cheese and smoked paprika on top.
Bake for 20-25 minutes until cheese is melted and bubbly.
