Ingredients
4 cups cooked chicken, cubed
3 cups broccoli florets (steamed)
1 can (10.5 oz) cream of mushroom soup
1/2 cup mayonnaise
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 tsp garlic powder
Salt and pepper to taste
1 cup crushed crackers or breadcrumbs (for topping)
Instructions
Preheat oven to 375°F (190°C).
Mix chicken, broccoli, cream of mushroom soup, mayonnaise, mozzarella, Parmesan, garlic powder, salt, and pepper.
Pour into casserole dish and sprinkle crushed crackers on top.
Bake uncovered for 25-30 minutes or until golden and bubbly.
3. Mexican Chicken and Black Bean Casserole
Ingredients
3 cups cooked chicken, shredded
1 can black beans, drained and rinsed
1 cup cooked corn
1 cup salsa
1 cup shredded Mexican blend cheese
1/2 cup sour cream
1 tsp chili powder
1/2 tsp cumin
Salt and pepper to taste
Fresh cilantro for garnish
Instructions
Preheat oven to 350°F (175°C).
Combine chicken, black beans, corn, salsa, sour cream, chili powder, cumin, salt, and pepper.
Pour into casserole dish and top with cheese.
Bake covered for 30 minutes, then uncover and bake 10 more minutes.
Garnish with fresh cilantro and serve.
