1. Classic Cheesy Chicken and Rice Casserole
Ingredients
3 cups cooked chicken, shredded
1 cup white rice, uncooked
2 cups chicken broth
1 cup sour cream
1 cup shredded cheddar cheese
1 small onion, diced
1 cup frozen peas and carrots
Salt and pepper, to taste
Instructions
Preheat oven to 350°F (175°C).
In a large bowl, mix cooked chicken, rice, chicken broth, sour cream, onion, peas, salt, and pepper.
Pour into a greased casserole dish and top with cheddar cheese.
Cover with foil and bake for 40 minutes.
Remove foil and bake for an additional 10 minutes until cheese is bubbly.
Serve warm.
