Prepare the syrup (optional): Combine sugar and water in a saucepan. Bring to a boil, then reduce heat and simmer for 5 minutes. Add lemon juice and let cool.
Lay out one sheet of baklava yufka on a clean surface. Brush with oil or melted butter.
Sprinkle a thin layer of ground nuts over the sheet.
Roll the sheet tightly into a log.
Repeat until all 22 sheets are filled and rolled.
Cut each roll into smaller bite-sized pieces.
Place the rolls in a greased baking tray. Brush the tops with extra oil.
Bake in a preheated oven at 180°C (350°F) for 20–25 minutes or until golden brown and crisp.
Once out of the oven, optionally pour cooled syrup over the warm rolls. Let rest to absorb.
