Simple & Healthy Garlic-Parsley Zucchini with Cheese

Heat olive oil in a large skillet over medium heat.

Add minced garlic and sauté for about 1 minute until fragrant, but not browned.

Add zucchini slices to the skillet, season with salt and black pepper, and cook for about 5-7 minutes, stirring occasionally, until zucchini is tender but still slightly crisp.

Remove from heat, sprinkle grated cheese over the warm zucchini so it melts slightly.

Toss with chopped fresh parsley and serve immediately.
