Shrimp Rice Casserole

Preheat oven to 350°F (175°C).

Cook rice: In a saucepan, bring chicken broth to a boil. Add rice, reduce heat, cover, and simmer for 15 minutes until liquid is absorbed.

Sauté veggies: In a skillet, melt butter over medium heat. Add onion, bell pepper, and garlic. Cook until softened, about 5 minutes.

Add shrimp: Stir in shrimp, paprika, cayenne (if using), salt, and pepper. Cook until shrimp just turn pink, about 3-4 minutes. Remove from heat.

Combine: In a large bowl, mix cooked rice, sautéed shrimp and veggies, sour cream, and half the cheddar cheese.

Bake: Transfer mixture to a greased casserole dish. Sprinkle remaining cheddar cheese on top. Bake uncovered for 20 minutes until cheese is bubbly and golden.

Serve: Garnish with fresh parsley and serve warm.
