Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a large bowl, mix the ground meat, cheeses, jalapeños, green onions, and all seasonings until well combined.
Form the mixture into small golf ball-sized balls.
Set up a breading station with separate bowls for flour, beaten eggs, and breadcrumbs.
Roll each ball in flour, dip in egg, and coat with breadcrumbs.
Heat oil in a skillet over medium heat. Fry the bites in batches until golden brown, about 3–4 minutes.
Transfer to the baking sheet and bake for 10–15 minutes until fully cooked.
Serve warm with dipping sauce like ranch or spicy aioli.
