Easy Vegan Creamy Cucumber Salad

Place the sliced cucumbers in a bowl and sprinkle with a pinch of salt. Let sit for 10 minutes to draw out excess moisture, then gently pat dry with a paper towel.

In a separate bowl, whisk together the vegan mayonnaise, apple cider vinegar, maple syrup, garlic powder, salt, and black pepper until smooth.

Add the cucumbers to the dressing and toss until evenly coated.

Stir in chopped fresh dill if using.

Refrigerate the salad for at least 20 minutes before serving to allow flavors to meld.
