Preheat your oven to 425°F (220°C).
In a large bowl, toss the potatoes with olive oil, minced garlic, rosemary, thyme, salt, and pepper until well coated.
Spread the potatoes out evenly on a baking sheet lined with parchment paper or foil.
Roast in the oven for 25-30 minutes, flipping halfway through, until the potatoes are golden brown and crispy on the edges.
Remove from the oven and sprinkle fresh parsley on top before serving.
