Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper or lightly grease it.
Mix Dry Ingredients:
In a large bowl, combine oats, nuts, dried fruits, chia seeds, cinnamon, and salt. Stir well.
Combine Wet Ingredients:
In a small saucepan over low heat, warm the peanut butter and honey until smooth and easily combined. Remove from heat and stir in vanilla extract.
Mix Together:
Pour the wet mixture over the dry ingredients. Stir until everything is evenly coated.
Press Into Pan:
Transfer the mixture to the prepared pan. Press it firmly and evenly using the back of a spatula or your hands.
Bake:
Bake for 15-20 minutes, until the edges are golden brown. Remove from oven and let cool completely in the pan.
Cut & Store:
Once cooled, lift the bars out using the parchment paper and cut into squares or rectangles. Store in an airtight container at room temperature or refrigerate for longer freshness.
