Preheat oven to 180°C (350°F). Grease or line a muffin tin with paper liners.
Mix wet ingredients: In a large bowl, beat the eggs well.
Add zucchini and veggies: Add the grated zucchini (with moisture), diced capsicum, cheese, garlic, and herbs. Stir to combine.
Combine dry ingredients: In a separate bowl, mix flour, baking powder, salt, and pepper.
Mix dry into wet: Gradually add the dry ingredients to the wet mixture. Stir gently until just combined.
Fill muffin tins: Spoon the batter into the muffin cups, filling each about 3/4 full.
Bake: Bake for 20–25 minutes or until the muffins are golden and a toothpick inserted in the center comes out clean.
Cool & serve: Let the muffins cool slightly before removing from the tin. Serve warm or at room temperature.
