Freeze the watermelon: Cut fresh watermelon into small cubes and freeze for at least 4–6 hours or overnight until completely solid.
Blend: Add the frozen watermelon, lime juice, and sweetener (if using) to a high-speed blender. Add 1/4 cup cold water and blend until smooth and slushy.
Adjust texture: If the blender struggles, add water 1 tablespoon at a time. Keep the consistency thick and icy.
Serve: Pour the slushie into glasses and garnish with mint or lime slices if desired. Serve immediately while frosty and refreshing.
