Activate yeast: In a small bowl, combine warm milk, yeast, and 1 tablespoon of sugar. Let it sit for 5–10 minutes until frothy.
Make the dough: In a large mixing bowl, mix the softened butter, yogurt, egg, and vanilla. Add in the activated yeast mixture. Gradually mix in the flour until a soft, non-sticky dough forms.
Roll and layer: Divide dough into 2–3 parts. Roll each part into a thin rectangle. Sprinkle a little sugar over the surface (optional), then roll it up like a jelly roll and slice into 1.5 cm (½ inch) thick pieces.
Bake: Preheat oven to 180°C (350°F). Place cookie slices onto a parchment-lined baking sheet. Bake for 15–20 minutes or until golden at the edges.
Finish: Let cool slightly. Dust with powdered sugar if desired.
