Preheat the oven to 180°C (350°F). Grease and flour a 19 cm (7.5 inch) round baking pan.
In a large bowl, beat the eggs with sugar and vanilla sugar until the mixture is light and fluffy.
Gradually add the flour mixed with baking powder, folding gently to combine.
Stir in the melted butter until fully incorporated into the batter.
Gently fold in the chopped apples, reserving a few pieces for the top.
Pour the batter into the prepared pan and spread evenly.
Arrange the reserved apple pieces on top. Sprinkle with the 3 tablespoons of sugar and cinnamon to your liking.
Bake for 40–45 minutes or until a toothpick inserted in the center comes out clean.
Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
