Prepare the steak: Season filet mignon with salt and pepper. Heat 1 tbsp butter in a skillet over medium-high heat. Sear steak on each side for about 3-4 minutes or until desired doneness. Remove steak and keep warm.
Cook the seafood: In the same skillet, add the remaining butter and garlic. Sauté for 1 minute. Add shrimp and lobster tails. Cook until shrimp turn pink and lobster meat is opaque (about 5-7 minutes). Remove seafood and keep warm.
Make the lobster sauce: Pour clam juice and white wine (if using) into the skillet, scraping the bottom to deglaze. Reduce heat to medium, then stir in heavy cream. Let sauce simmer gently until slightly thickened, about 3-5 minutes. Season with salt and pepper.
Combine and serve: Place steak on a serving plate, top with shrimp and lobster tails, then drizzle generously with the lobster sauce. Garnish with fresh parsley.
