Prepare the dough:
In a large bowl, mix the flour, salt, and gradually add water. Knead until a smooth, elastic dough forms. Cover and rest for 15 minutes.
Prepare the filling:
In a bowl, combine finely chopped spinach, grated onion, salt, and chili pepper. Mix well.
Assemble flatbreads:
Divide the dough into equal portions. Roll each portion into a thin circle. Spread a generous amount of the spinach filling onto one half of the circle. Fold the other half over and seal the edges.
Cook:
Heat a non-stick skillet over medium heat. Cook each flatbread for 2-3 minutes on each side, until golden brown and cooked through.
