Spinach Cake — Green and White Cake

Preheat oven and prepare pan: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line with parchment paper.

Blend spinach and milk: In a blender, combine the chopped spinach and milk. Blend until smooth and bright green.

Beat eggs and sugar: In a large bowl, beat the eggs and sugar until light and fluffy.

Add oil and vanilla: Slowly add the vegetable oil and vanilla extract to the egg mixture while continuing to beat.

Mix dry ingredients: In a separate bowl, sift together the flour, baking powder, baking soda, and salt.

Combine wet and dry: Gradually add the dry ingredients to the egg mixture, alternating with the spinach-milk mixture. Mix gently until just combined.

Pour batter into pan: Pour the batter into the prepared pan, smoothing the top with a spatula.

Bake: Bake for 35–40 minutes or until a toothpick inserted in the center comes out clean.

Cool: Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
