Roasted Pork Neck with Garlic and Orange Potatoes

Prepare the pork: Pat the pork neck dry with paper towels. Rub all over with salt, pepper, and 1 tbsp vegetable oil.

Sear the meat: Heat a large ovenproof skillet or roasting pan over medium-high heat. Add pork and brown on all sides for about 5 minutes to lock in juices.

Prepare potatoes: In a bowl, toss potatoes with remaining 1 tbsp vegetable oil, minced garlic, orange zest, orange juice, and herbs (if using). Season with salt and pepper.

Roast: Arrange potatoes around the pork in the pan. Transfer to a preheated oven at 180°C (350°F) and roast for 1 hour, or until pork is cooked through and potatoes are tender and golden.

Rest and serve: Let pork rest for 10 minutes before slicing. Serve with the garlic-orange potatoes on the side.
