One-Pot Lemon Garlic Shrimp Pasta

Ingredients:

8 oz (225 g) gluten-free spaghetti (or regular pasta)

1 tablespoon olive oil

4 cloves garlic, minced

1 pound (450 g) raw shrimp, peeled and deveined

Zest and juice of 1 large lemon

1/4 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

3 cups water or low-sodium broth

2 tablespoons ghee or butter

2 tablespoons chopped fresh parsley (plus extra for garnish)
