Preheat Oven: Set your oven to 180°C (356°F).
Prepare Fruit & Veggies: Peel and grate the carrot and apple. Chop the dried apricots into small pieces.
Mix Wet Ingredients: In a large bowl, whisk the eggs and milk together until smooth.
Combine Dry Ingredients: Add oatmeal and baking powder to the egg and milk mixture. Stir well.
Add Fruit: Fold in the grated carrots, grated apple, raisins, and chopped dried apricots. Mix until everything is evenly combined.
Pour Into Pan: Grease a baking dish or line with parchment paper. Pour the mixture into the dish and spread evenly.
Bake: Place in the oven and bake for 30-35 minutes or until the top is golden and a toothpick inserted in the center comes out clean.
