In a large bowl, combine garlic, lemon juice and zest, olive oil, oregano, salt, and pepper.
Add chicken quarters and coat them thoroughly with the marinade. Cover and refrigerate for at least 1 hour, preferably overnight for deeper flavor.
Preheat oven to 400°F (200°C).
Place chicken quarters on a baking tray lined with parchment paper or a lightly greased roasting pan.
Roast for 35-45 minutes, until the skin is crispy and the internal temperature reaches 165°F (75°C).
Let rest for 5 minutes before serving. Garnish with fresh parsley if desired.
