Mix filling: In a bowl, beat the cream cheese and sugar until smooth and creamy.
Add egg and vanilla: Beat in the egg and vanilla extract until fully combined.
Fill tart shells: Spoon the cream cheese mixture evenly into each pre-made tart shell.
Bake: Place the filled tarts on a baking tray and bake for 15–18 minutes, or until the filling is set and lightly golden on top.
Cool: Let cool before serving. Optionally, chill in the fridge for a firmer texture.
