In a large mixing bowl, combine the warm water and sugar. Sprinkle in the yeast and let it sit for 5–10 minutes until foamy.

Add the flour, salt, chia seeds, and olive oil. Stir with a wooden spoon or mix with your hands until a soft, sticky dough forms.

Knead the dough on a lightly floured surface for 8–10 minutes until smooth and elastic.

Lightly grease a clean bowl with sunflower oil. Place the dough inside, cover with a kitchen towel, and let it rise in a warm spot for 1 hour or until doubled in size.

Preheat your oven to 220 °C (425 °F). Place a small oven-safe dish of water on the bottom rack to create steam for a crisp crust.

Shape the dough into a round or oval loaf. Place on a floured baking tray or in a greased loaf tin. Dust lightly with flour and score the top with a sharp knife.

Bake for 30–35 minutes until golden brown and the loaf sounds hollow when tapped on the bottom.

Cool on a wire rack before slicing.
