Comforting Chicken Noodle Soup for When You're Feeling Under the Weather

Sauté the aromatics:
In a large pot, heat the olive oil or butter over medium heat. Add onion, garlic, carrots, and celery. Cook for 5–7 minutes until the vegetables begin to soften.

Add broth and chicken:
Pour in the chicken broth and bring to a gentle boil. Add the cooked chicken, thyme (or herbs), salt, and pepper. Simmer for 10 minutes to blend flavors.

Cook the noodles:
Add the egg noodles and simmer for another 8–10 minutes, or until the noodles are tender. Stir occasionally.

Finish and serve:
Taste and adjust seasoning. Add a squeeze of lemon for a fresh touch, and garnish with chopped parsley if desired. Serve warm.
