Chocolate Chip Cheesecake Bars

1. Prepare the crust:
Preheat oven to 325°F (165°C). Line an 8x8-inch (20x20 cm) baking pan with parchment paper.
In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press mixture evenly into the bottom of the pan.

2. Bake the crust:
Bake for 10 minutes, then remove from oven and let cool slightly.

3. Make the cheesecake filling:
In a large bowl, beat softened cream cheese and sugar until smooth. Add eggs one at a time, beating after each. Stir in vanilla and sour cream.

4. Assemble the bars:
Pour the filling over the crust and spread evenly. Sprinkle chocolate chips over the top.

5. Bake the bars:
Bake for 35–40 minutes or until the center is set. Let cool completely in the pan.

6. Serve:
Slice into 12 squares and enjoy!
