Preheat oven to 180°C (350°F). Grease a baking dish with a little oil or butter.
Sauté vegetables: Heat vegetable oil and butter in a pan over medium heat. Add chopped onions and cook until translucent. Add grated carrots and shredded cabbage, cooking for about 5 minutes until softened. Remove from heat and let cool slightly.
Mix eggs and dry ingredients: In a large bowl, beat the 4 eggs with salt and sweet paprika. Stir in the flour and baking powder until combined.
Combine: Add the sautéed vegetables and sliced green onions to the egg mixture. Mix well.
Pour into baking dish: Transfer the mixture into the prepared baking dish and spread evenly.
Prepare topping: Mix the beaten egg, diced tomato, Greek yogurt, and grated cheese together in a small bowl. Spread this mixture evenly over the vegetable bake.
Bake: Place in the oven and bake for 30-35 minutes or until the top is golden and the bake is set in the middle.
Cool slightly: Remove from the oven and let it cool for a few minutes before slicing.
