Prepare the Zucchini:
Preheat your oven to 375°F (190°C).
Cut zucchinis in half lengthwise.
Using a spoon, scoop out the seeds and some flesh to create a boat shape. Reserve the scooped flesh if you want.
Prepare the Filling:
4. In a mixing bowl, combine crab meat, cream cheese, mayonnaise, Dijon mustard, minced garlic, green onions/chives, paprika, salt, and pepper.
5. Mix well until fully combined.
Assemble the Boats:
6. Place zucchini halves on a baking dish.
7. Spoon the crab mixture evenly into each zucchini boat.
8. Sprinkle shredded mozzarella and grated Parmesan on top.
Bake:
9. Bake for 20-25 minutes until zucchini is tender and cheese is golden and bubbly.
Garnish and Serve:
10. Remove from oven and garnish with fresh parsley or chives if desired.
11. Serve warm as an appetizer or main dish.
