Prep the vegetables:
Chop the onion, carrot, green pepper, garlic, spring onions, cilantro, and tomato.

Cook the vegetables:
In a large skillet, melt the butter over medium heat. Add onion, carrot, and green pepper. Sauté until softened, about 5 minutes. Add garlic and cook for 1 minute more.

Add cabbage:
Stir in shredded cabbage and cook until wilted and tender, about 7-10 minutes.

Prepare oats:
Mix oats with Greek yogurt and set aside.

Cook eggs:
Beat the eggs lightly. Push the vegetables to the side of the pan and scramble the eggs in the empty space until cooked through.

Combine everything:
Mix eggs with the vegetables. Stir in the oat and yogurt mixture, cheese, chopped tomato, spring onions, and cilantro. Cook for another 2-3 minutes, allowing cheese to melt slightly.
