Black Cherry Cookies – Neapolitan Treats

Prepare the dough:
In a large bowl, mix flour, sugar, lemon zest, and salt. Add cold butter and rub it in with your fingers or use a pastry cutter until the mixture is sandy. Add the egg, yolk, and vanilla. Knead quickly into a smooth dough. Wrap and chill for 30 minutes.

Shape the cookies:
Preheat the oven to 180°C (350°F). Roll out the dough to about 5 mm thick. Cut rectangles (approx. 8x6 cm). Place a teaspoon of cherry jam and a sprinkle of chocolate in the center of each. Fold and seal like a small turnover or envelope.

Bake:
Place on a lined baking tray. Brush with the egg yolk and milk mixture. Bake for 15–20 minutes or until lightly golden.

Cool and serve:
Let cool on a wire rack. Dust with powdered sugar if desired.
