Traditional Neapolitan Pastries with a Juicy Cherry Heart
These Black Cherry Cookies, also known in Naples as Biscotti alle amarene, are classic pastries filled with sweet black cherry preserves and wrapped in a tender, buttery dough. These cookies are perfect with espresso or as an elegant treat for guests.Ingredients (makes about 15 cookies)
For the pastry dough:
300 g (2 ½ cups) all-purpose flour
100 g (½ cup) sugar
150 g (2/3 cup) unsalted butter, cold and cubed
1 egg
1 egg yolk
1 tsp vanilla extract
Zest of 1 lemon
Pinch of salt
For the filling:
150 g (½ cup) black cherry jam or preserves
50 g (⅓ cup) chopped dark chocolate (optional but traditional)
For brushing and topping:
1 egg yolk + 1 tbsp milk (for brushing)
Powdered sugar (optional, for dusting)
