Sweet Potato Cake

Preheat oven to 350°F (175°C). Grease a small cake pan or line with parchment paper.

In a mixing bowl, whisk the eggs until frothy.

Add mashed sweet potato and maple syrup (or honey). Mix well until smooth and combined.

Pour the batter into the prepared pan and smooth the top.

Bake for about 25–30 minutes, or until a toothpick inserted into the center comes out clean.

Let cool before slicing and serving.

Serving Tips
Serve plain or with a dollop of whipped cream or yogurt.

Sprinkle cinnamon or nutmeg on top for extra warmth.
