Stuffed Chicken Breast with Vegetables and Cheese

Preheat oven to 375°F (190°C).

Carefully cut a pocket into each chicken breast without slicing all the way through.

In a pan, heat olive oil over medium heat. Sauté garlic, bell peppers, mushrooms, and spinach until softened, about 3–4 minutes. Season with salt and pepper.

Stuff each chicken breast with the vegetable mixture and cheese. Secure with toothpicks or kitchen twine.

Season the outside of the chicken with salt and pepper.

Place the stuffed chicken breasts in a baking dish and bake for 25–30 minutes, or until chicken is cooked through and juices run clear.

Let rest for 5 minutes before serving.
