Preheat Oven: Preheat your oven to 200°C (390°F). Line a baking tray with parchment paper.
Prepare Puff Pastry: Roll out the yeast puff pastry on a lightly floured surface into a rectangle about 12 x 16 inches (30 x 40 cm).
Add Toppings: Brush the puff pastry lightly with olive oil. Spread ketchup evenly over the surface, leaving a small border around the edges.
Add Bacon and Cheese: Sprinkle the chopped bacon evenly over the ketchup, then sprinkle shredded mozzarella on top.
Roll It Up: Starting from the longer side, carefully roll the pastry into a tight log. Seal the edge with a little water to keep it closed.
Slice Rolls: Cut the rolled pastry into 1-inch (2.5 cm) thick slices and place them cut side up on the baking tray, leaving space between each roll.
Bake: Bake in the preheated oven for about 20 minutes or until the pastry is golden brown and puffed, and the bacon is cooked.
Garnish and Serve: Remove from the oven and sprinkle fresh chopped parsley on top. Serve warm.
