In a large mixing bowl, combine shredded zucchini and sliced green onions (if using).
Beat the eggs in a separate bowl, then stir in the sour cream until smooth.
Add the egg and sour cream mixture to the zucchini and onions, mixing well until fully combined.
Pour the batter into the prepared loaf pan, spreading evenly.
Bake for about 40-50 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
