Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
Roll out the puff pastry on a lightly floured surface and cut it into strips.
Spread mustard (if using) on each strip. Add a slice of ham and sprinkle cheese on top.
Roll up each strip, sealing the edges to keep the filling inside.
Brush the tops with beaten egg for a glossy finish.
Bake for 15–18 minutes or until golden brown and puffed. Serve warm.
