Preheat your oven to 375°F (190°C). Grease a 6-cup muffin tin or line with silicone cups.

In a bowl, whisk together eggs, heavy cream, parmesan, salt, and pepper until smooth.

Divide the chopped bacon, cheddar cheese, and green onion evenly into each muffin cup.

Pour the egg mixture on top, filling each cup about ¾ full.

Bake for 18–20 minutes, or until puffed and lightly golden.

Cool for 5 minutes before removing from the tin. Serve warm or store for later.
