Preheat your oven to 180°C (350°F).
In a large baking dish, layer the sliced zucchini and tomatoes alternately.
Sprinkle the chopped spinach evenly over the layers.
Season with salt to taste and drizzle with olive oil.
Pour 1 liter of water into the dish carefully around the veggies (not directly on top).
Cover the dish with foil and bake for about 30-40 minutes until the vegetables are tender.
Remove the foil in the last 10 minutes to let the top slightly brown.
Garnish with fresh basil leaves before serving.
