Delicious Baked Vegetables – Easy Dinner Recipe

Preheat oven to 200°C (400°F).

Place all vegetables in a large bowl. Drizzle with olive oil if using and sprinkle salt and herbs. Toss to coat evenly.

Spread vegetables out on a baking sheet in a single layer.

Bake for 35–40 minutes, stirring halfway through, until vegetables are tender and golden brown on edges.

Remove from oven and serve warm.
