Preheat oven to 325°F (165°C). In a bowl, combine graham cracker crumbs, ¼ cup sugar, and melted butter. Press the mixture firmly into the bottom of a springform pan.
Bake for 8–10 minutes, then let cool completely.
Make the Cheesecake Filling:
In a large bowl, beat the softened cream cheese and 1 cup sugar until smooth. Add vanilla extract. Add eggs one at a time, mixing well after each.
Mix in sour cream, heavy cream, and cocoa powder until fully combined.
Bake the Cheesecake:
Pour the cheesecake mixture over the cooled crust. Bake for 50–55 minutes until the edges are set but the center is slightly wobbly. Remove from oven and cool completely.
Add Toppings:
Once the cheesecake is cooled, spread cherry pie filling evenly over the top. Drizzle melted dark chocolate over the cherries.
Serve:
Before serving, top with a generous amount of whipped cream.
