Preheat your oven to 200°C (390°F).
In a pan, sauté the chopped onion and mushrooms with garlic until soft. Season with salt, pepper, smoked paprika, and parsley. Set aside to cool.
Lay the chicken fillets flat and season both sides with salt, pepper, and a bit of smoked paprika.
Place a generous spoonful of the sautéed mushroom mixture on each fillet, then roll up tightly.
Wrap each chicken roll with bacon strips, securing with toothpicks if necessary.
Place the bacon-wrapped rolls on a baking tray lined with parchment paper.
Bake for 25-30 minutes or until the chicken is cooked through and the bacon is crispy.
Let rest for a few minutes before serving.
