Creamy Spiced Chicken Thighs in Tomato Sauce

Season the chicken thigh fillets with salt and black pepper.

In a large skillet over medium heat, cook the chicken until browned on both sides. Remove and set aside.

In the same pan, add the chopped onion and sauté until translucent.

Add the garlic and chopped tomato. Cook for 2–3 minutes until softened.

Pour in the grated tomatoes and bring to a gentle simmer.

Stir in the cayenne pepper and curry powder. Mix well.

Return the chicken to the pan, cover, and let simmer for 15–20 minutes, allowing the flavors to develop.

Add the cream and stir gently to combine. Let cook for another 5 minutes until the sauce thickens slightly.

Garnish with chopped parsley before serving.
