Preheat your oven to 180°C (350°F).
Line a muffin tin with paper liners or grease well.
Prepare the muffin batter:
In a large bowl, mix the oatmeal, chopped apple, grated carrot, and baking powder.
In another bowl, whisk the eggs, mashed banana, and melted coconut oil.
Combine the wet ingredients with the dry ingredients and stir until just mixed.
Fill the muffin tins:
Spoon a small amount of the oatmeal batter into each muffin cup, filling about one-third.
Add a spoonful of cottage cheese in the center as the filling.
Cover with the remaining muffin batter until cups are about 3/4 full.
Bake:
Bake for 35–45 minutes or until a toothpick inserted into the muffin (not the filling) comes out clean.
Cool:
Let muffins cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
