Zucchini, Potato, Carrot & Cheese Muffins

01 โ†’ Preheat oven to 180ยฐC (350ยฐF). Grease a muffin tin or line with paper cups.
02 โ†’ In a bowl, mix the grated zucchini, potato, and carrot.
03 โ†’ Add eggs and oil, stirring until combined.
04 โ†’ Add cheese, flour, baking powder, salt, pepper, and optional herbs. Mix until evenly incorporated.
05 โ†’ Spoon batter into muffin cups, filling each about 2/3 full.
06 โ†’ Bake for 20โ€“25 minutes, or until golden and set.
