In a saucepan, whisk together the sugar, cornstarch, lemon zest, and salt.
Slowly add the lemon juice and plant-based milk, whisking constantly to avoid lumps.
Place over medium heat and cook, stirring continuously, until the mixture thickens (5–8 minutes).
Once thick, remove from heat and stir in coconut oil or vegan butter and turmeric (if using).
Let cool slightly, then pour into a jar or bowl. It will continue to thicken as it cools.
Chill in the fridge for at least 1 hour before using.
