Introduction
This Green Piña Colada Smoothie is a vibrant fusion of tropical flavors and nourishing greens. Inspired by the classic piña colada, this smoothie swaps sugary mixers for whole, plant-based ingredients. With the creaminess of coconut, natural sweetness of pineapple and banana, and the power of leafy greens, it’s a refreshing and energizing drink you can feel good about.
Ingredients:
1 young Thai coconut (water and meat) or 1 (13.5 oz) can of coconut milk
1 ripe banana
1 (16-ounce) bag frozen organic pineapple chunks (unsweetened)
½ bunch of collard greens, stems removed (about 4–5 large leaves)
How to make:
If using a young Thai coconut, crack it open and pour out the water, then scoop out the soft coconut meat. Add both to a high-speed blender. If using canned coconut milk, shake well and pour the entire can into the blender.
Add the banana, frozen pineapple, and collard greens.
Blend on high speed until completely smooth and creamy, about 1–2 minutes.
Taste and adjust the thickness by adding a splash of water or coconut water if desired.
Serve immediately in a tall glass or bowl.
