Ingredients (Serves 2)
For the Roasted Potatoes & Asparagus:
400g (14 oz) baby potatoes, halved
1 bunch asparagus, trimmed
2 tbsp olive oil
½ tsp garlic powder
½ tsp salt
½ tsp black pepper
For the Salmon:
2 salmon fillets (about 5 oz each)
1 tbsp olive oil
½ tsp paprika
½ tbsp lemon juice
½ tsp salt
½ tsp black pepper
For the Poached Eggs:
2 eggs
1 tbsp vinegar (for poaching water)
For the Hollandaise Sauce:
2 egg yolks
4 tbsp unsalted butter, melted
½ tbsp lemon juice
½ tsp Dijon mustard
Salt and black pepper, to taste
