2 eggs

1 tbsp olive oil

Salt & black pepper (to taste)

½ lb baby potatoes, halved

1 cup asparagus, trimmed

1 tbsp unsalted butter

1 tbsp fresh chives, chopped (for garnish)

For the hollandaise sauce:

2 egg yolks

½ cup unsalted butter, melted

1 tbsp lemon juice

1 tsp Dijon mustard

Salt & cayenne pepper (to taste)
