In a large bowl, dissolve sugar and yeast in warm water. Let sit for 5-10 minutes until frothy.
Add the flour, salt, and olive oil to the yeast mixture. Stir well until combined and a sticky dough forms.
Cover the bowl with a clean towel or plastic wrap. Let it rise at room temperature for 1 to 1.5 hours, or until doubled in size.
Preheat your oven to 220°C (430°F). Grease or line a baking tray.
Lightly flour your hands and shape the dough into a rough oval or round loaf on the tray. No kneading necessary!
Optionally, sprinkle flour or score the top with a knife for a decorative look.
Bake for 25-30 minutes or until the crust is golden brown and the bread sounds hollow when tapped on the bottom.
Let the bread cool on a rack before slicing.
