Activate yeast:
In a small bowl, mix warm milk, yeast, and 1 tbsp sugar. Let sit 5-10 minutes until frothy.
Make dough:
In a large bowl, combine flour, salt, remaining sugar. Add eggs, melted butter, and yeast mixture. Stir until combined.
Knead:
Lightly flour a surface and knead dough for about 5 minutes until smooth and elastic. Place dough in a greased bowl, cover, and let rise for 45 minutes until doubled.
Shape doughnuts:
Roll dough out to about ½ inch thick. Use a doughnut cutter or two round cutters (one large, one small for the hole) to cut doughnuts and holes.
Second rise:
Place doughnuts on a baking sheet, cover, and let rise 20 minutes.
Cook:
Frying: Heat oil to 350°F (175°C). Fry doughnuts 1-2 minutes per side until golden. Drain on paper towels.
Baking: Preheat oven to 375°F (190°C). Place doughnuts on a greased baking sheet and bake 10-12 minutes until golden.
Add toppings:
Dip warm doughnuts in glaze, sprinkle with cinnamon sugar, or drizzle melted chocolate.
